This post is for the Northern Colorado readers or anyone inspired to take a dream and run with it. Every Thursday, my friends and I gather at the Fly By Diner. Thursdays, you will find the Diner in the back parking lot of the New Belgian Brewery. The employees at New Belgian are lucky for a LOT of reasons, but walking two feet to the best food in NoCo is just nuts. Jan and Sarah take the time to infuse every menu with a HUGE dose of creativity. I'm going to re-print the Valentines day menu just so that you can slap your forehead and yell: "where was I!!!????"..... You will find them catering full time. If I won the lottery, I would hire them as personal cooks. In addition to Thursdays at New Belgian, they show up at Advanced Energy on Wednesdays. Suit up AE Geeks, drop that bologna sandwich with the crusts symmetrically cut with a t-square and try something REALLY amazing. Yes, even more amazing than the quantum laser sword that you took to Comic Con last year. I can't say enough about their organic, locally sourced ingredients. There's always something for everyone. Meat eaters?...get out your knives. Vegetarians? they've got you covered too and we're not just talking tofu and sprouts here. We sit in our cars, on curbs, take it away, perch on dumpsters, whatever we have to do. A very long community picnic table and a Fat Tire beer would make Thursdays official HEAVEN.
Look at them. Aren't they adorable? Smart. Sassy. Talent oozing from every apron-ed pore.
Notice the prices?...really. We drank the Love Potion #9, and returned for the Aztec Infusion which is actually indescribable. If you know ME, that's rare. This is just a sample of a weekly menu. Go to their website and sign up for their weekly emails.
February 8-12
*Chiles en Nogada (Chiles in Walnut Sauce) $8
A traditional Mexican dish of stuffed roasted poblano chilies filled with
"picadillo" -a blend of ground pork, an aromatic blend of herbs,
spices, savory vegetables, and sweet peaches- topped with a vanilla infused
walnut sauce and a sprinkling of pomegranate seeds or dried cherries. (gluten

*Pilas Mexicanas de Amor (Mexican love stacks) $8
Grilled fresh made polenta pairs with an exotic blend of roasted chiles, anasazi
beans, avocado, and queso fresco. A rich dark chocolate mole "seals the
deal." (gluten free, vegetarian)
*Stack Italiani d'Amore (Italian love stacks) $8
Grilled fresh made polenta, roasted artichoke hearts, red pepper, roasted
tomatoes, asparagus, pine nuts, and parmesan - topped with a rosemary-honey
infused balsamic reduction. (gluten free, vegetarian)
*Chocolate Kahlua Truffles $1

Catering trucks have been around for ages, but these gals have taken that concept to an unbelievable level in every way. That menu is incredible and innovative and so are they. Thanks so much for sharing, Lisa. xox

So...I have this little somethin' for you AND can you believe I have NEVER been to visit the New Belgium brewery??? I even helped Mario with the tile mosaic's that surround the beer vat thingies...
next Thursday??? do you have plans??? want to meet me there so I can partake of the Fly By Diner???
